Dale's Steak Seasoning is my secret for all things which used to walk the earth. Usually I'll pour about a 1/4 to 1/2 a bottle in to a large ziplock and let it sit over night with the meat. Knead that up with a few egg whites (pretty much essential when dealing with Bison due to the low fat content) and you've got a decent burger. |

All depends on my mood: One of my favorites is to season hte ground beef with montereal steak seasoning, make the paties thin and large (the size of a soft shell taco tortillia) and stuff them with onions, mushrooms, grated swiss or a if I am in the mood for more spice I will stuff them with roasted green chilli's and chedar cheese. Wrap them up in foil and cook them right in the coals. When they are done you have the juciest burger with the best flavor ever. Serve that with a cold frosty beverage around a good fire and there is not much better. Now I am all hungry. I suppose tonight is better for Chili though |

Most of my family are wimpy when it comes to hamburgers with pink in the middle, so I had to come up with a method of keeping the burgers juicy even when they are well done. I don't know if you have that problem, but here's what I do. 2 pieces of white sandwich bread torn into small pieces in a bowl. 3 tablespoons of milk poured over the bread. use a fork to mash the bread and milk into a paste 1-2 teaspoons of Montreal steak seasoning to the paste 2lbs of ground beef added to bowl and mixed together. Add a little A-1 to the paste if you want to intensify the meat flavor. Bread and milk is an old italian trick for keeping meatballs moist and it works good on well done hamburgers too. |

The guys in Pueblo put their burgers in a Bowl and smother it with Green Chille Sauce - Sounds so dang good. I am getting one when I am down that way again. |

I'm gonna have to try some of these ideas. I always put finely chopped onions in the mix, The onions steam a bit as they cook and keep it moist. Typically, I add a little bbq sauace, Worchester and whatever spices sound good at the time to the mix and grill them up. One I made a few years ago,, A bit over the top but it was good. Fried egg, bacon, several cheeses, caramelized onions and who knows what else. lol. Slightly off topic,,, Ever try a fattie? Flatten out a roll of jimmy dean sausage add whatever you like, ,I use pepper jack cheese and jalapeno slices. Roll it all back up, cover with some spices or rub or with bacon Smoke on the smoker for a couple of hours. Slice and enjoy. Brett |
