July breakfast question

I'm working on coming up with some cool breakfast options for the summer meets. There has long been some discussion about an Idaho Springs breakfast with wheeling after and I'd been planning to do that for July but discovered that 4Wheel Parts Truck Fest is 7/12 and 7/13 and there is a good greasy spoon nearby. While I suspect I know the winner, thought I'd put it out there for opinions. Idaho Springs could be done in August. Thoughts?
